Zucchini relish

I make a relish using Zucchini any advice for using frozen zucchini all the other ingredients would be fresh I am not sure about the process change I start out by putting the Onions Zucchini and peppers in a bowl and cover with salt overnight and rinse in morning using the frozen might change this, its like using cooked zucchini I don't know could I do this.
