What about pickled beets? Okay to water bath those?

Answer: Yes, it's okay to use a boiling water canner when processing pickles. Pickled beets have higher acid content because of the vinegar.

Beets need to be processed in a pressure cooker because they are a low acid food. Do not hot water bath beets.
