Zucchini Casserole Recipes
There are many zucchini casserole recipes. Let’s start with one of my favorite summer meals. It’s a great way to use your fresh zucchini.
Zucchini Supreme
Eltie Wilding Boil ½ cup of chopped onions in the water you’re going to use for the Stove Top Stuffing. Leave the onions in the stuffing. Make one package of Stove Top Stuffing or you can make homemade stuffing Steam the vegetables until they are soft 6 cups zucchini (peel & cut the zucchini into bite size pieces) 1 cup grated or diced carrots Mix 1 cup sour cream and 1 can cream of chicken soup {or 2 cans of cream of chicken soup with approximately 1 cup of water (gravy consistency).} Stir the softened vegetables into the gravy. Spread the stuffing on the bottom of an 8” x 8” pan. Pour the vegetable mixture over the stuffing and cover with tin foil. Bake at 350° for 30 minutes. Optional - If you have fresh tomatoes, sprinkle some diced tomatoes over the top of the casserole after it comes out of the oven. More Recipes coming!
