How to Make Pumpkin Bread
by Joy Wilding Learn how to make pumpkin bread using your fresh or canned pumpkin. We've been eating fresh pumpkin bread for years. It's a great way to use the fresh pumpkin from your garden. It also freezes well, if you want to save a few loaves for later.
Ingredients
- 4 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp cloves
- 1 tsp ginger
- 2 tsp salt
- 4 tsp soda
- 8 eggs
- 4 cubes butter
(You can substitute 2 cups of oil or 2 cups of applesauce for the butter) - 1 cup honey
- 4 cups pumpkin
- 6 cups wheat flour
- Optional- add chopped nuts
Cream the butter, sugar, and eggs together. Mix in the pumpkin and dry ingredients. Bake in a greased loaf pans for 1 hour at 350°. Yields 4 loaves.
To check and see if the pumpkin bread is done, stick a knife in the middle of the loaf and pull it back out. If there's dough on the knife, you need to cook it a little longer. If the knife is clean, the bread is done.
